Researchers at Tulane University were curious whether legumes in the American diet (specifically peas) have the same cholesterol-lowering effects as soybeans, which are common in Asian diets. They pored through 140 studies, and the answer was… yes. In addition to helping lower cholesterol, the rich fiber content of peas can help regulate blood sugar. Surprisingly, peas also contain a good amount of omega-3s, which play a role in controlling inflammation.
