Folate impairs production of homocysteine, which can damage blood vessels – high homocysteine levels have been implicated in cardiovascular disease and dementia. Abundant in vitamin C which can reduce inflammation associated with rheumatoid arthritis. Animal studies have also shown that parsley can help repair the lining of the stomach.
