Choose organic, grass-fed beef to reduce your exposure to antibiotics, hormones, pesticides, and other toxins, and to obtain even higher levels of certain nutrients abundant in lean beef, notably vitamin B12, selenium, and, to a lesser extent, omega-3s. Vitamin B12 can help lower levels of homocysteine, a metabolic by-product associated with heart disease and dementia. Selenium is important for proper functioning of antioxidants that fight cancer, notably glutathione.
