Grilled Vegetables with Quinoa
This is a variation of our Grilled Vegetable Platter that turns it into a main course vegetarian meal. Here we cooked quinoa in Magic Mineral Broth. We also skipped the vinaigrette from the vegetable platter and substituted our Go to Vinaigrette as a drizzle over the top of the dish. Give it a try!

INGREDIENTS
1 recipe of the Grilled Vegetable Platter
1 cup quinoa
1 generous pinch of salt
1 3/4 cup Magic Mineral Broth
1 recipe of the Go to Vinaigrette
DIRECTIONS
Follow the recipe for the Grilled Vegetable Platter
Soak the quinoa in water for 5 minutes. Drain in a fine mesh sieve and rinse under cold water.
Heat quinoa in a medium skillet to dry it and toast it a bit, about 2 minutes. Add Magic Mineral Broth and a pinch of salt. Bring to a boil then reduce heat, cover and simmer for 20 minutes or until all broth is absorbed. Let stand for 10 minutes then fluff with a fork.
Spread quinoa on a platter then mound the grilled vegetables over the top. Drizzle with some of the Go to Vinaigrette. Serve warm or at room temperature.
