Energy Balls
These Energy Balls are easy to make (no baking involved), tasty and a great way to get a bit of extra protein in your days as well as energy for your active lifestyle. You also get a good amount of fiber from then as well. You can also adapt them to your own taste by leaving out the cocoa and adding cinnamon instead. They taste great too!
MAKES: 20 Servings
PREP/COOK TIME: 40 minutes
INGREDIENTS
1 Cup rolled oats
½ Cup almond butter (preferably fresh ground)
½ teaspoon Kosher salt (such as Diamond Crystal)
½ Cup ground flax seed
1/4 Cup maple syrup
1 Tablespoon chia seeds
1 teaspoon vanilla extract
2 Tablespoons unsweetened cocoa powder
DIRECTIONS
Combine the almond butter, vanilla and maple syrup. Mix until well combined.
Add in the oats, ground flax, chia, salt and cocoa powder. Mix until well combined.
Cover and chill the dough in the refrigerator for at least 30 minutes..
Remove dough from the refrigerator; roll the dough into twenty 1-inch diameter balls.
Store the balls in the refrigerator in and air tight container. They are best if allowed to rest over night.
