Grape, Avocado and Arugula Salad
This is a simple nutritious salad recipe that is full of vitamins, fiber and flavor! It makes a great meal with the addition of avocado and nuts for protein and healthy fats or side salad to some grilled fish.

INGREDIENTS
FOR THE SALAD
6 cups fresh baby arugula, loosely packed
1 cup seedless grapes, any color, halved
1 avocado, peeled, pitted and diced
1/3 cup crumbled goat cheese
1/3 cup chopped toasted walnuts or pecans
1/2 small red onion, thinly sliced
FOR THE DRESSING
1/3 cup extra virgin olive oil
3 Tablespoons white balsamic vinegar
2 Tablespoons honey
1/4 teaspoon salt
1/4 teaspoon freshly-cracked black pepper
DIRECTIONS
To toast the nuts, place them in a dry frying pan on medium heat. stir the nuts often to prevent scorching. Toast until they smell fragrant and begin to brown, about 2 to 3 minutes. Cool for a few minutes.
Add all the salad ingredients to a serving bowl.
To make the dressing, add the vinegar, honey, salt a pepper to a small bowl and mix together. Whisk in the olive oil.
Drizzle the dressing on the salad and toss to combine. Serve immediately.
